Ingredients:

500 grams of fish (preferably firm fish like cod, tilapia, or salmon)

2 tablespoons vegetable oil

1 large onion, finely chopped

2 tomatoes, chopped

4 cloves garlic, minced

1-inch piece of ginger, grated

2 green chillies, slit lengthwise

1 teaspoon mustard seeds

1 teaspoon cumin seeds

1 teaspoon turmeric powder

1 teaspoon coriander powder

1 teaspoon red chilli powder

1 teaspoon garam masala

1 cup coconut milk

Salt to taste

Fresh coriander leaves, chopped (for garnish)

Instructions:

Prepare the Fish:


Clean and cut the fish into medium-sized pieces.

Marinate the fish pieces with a pinch of salt and turmeric powder. Set aside for about 15 minutes.

Make the Curry Base:


Heat the vegetable oil in a large pan over medium heat.

Add the mustard seeds and cumin seeds. Let them splutter.

Add the chopped onions and sauté until they turn golden brown.

Add the minced garlic, grated ginger, and slit green chillies. Sauté for another 2-3 minutes.

Add the Tomatoes and Spices:


Add the chopped tomatoes to the pan and cook until they soften and the oil starts to separate.

Stir in the turmeric powder, coriander powder, red chilli powder, and salt. Mix well.

Cook the Fish:


Add the marinated fish pieces to the pan. Gently mix to coat the fish with the spice mixture.

Pour in the coconut milk and bring the curry to a gentle simmer.

Cook for 10-12 minutes or until the fish is cooked and the flavours are well combined. Be careful not to overcook the fish.

Finish and Serve:


Sprinkle garam masala over the curry and mix gently.

Garnish with freshly chopped coriander leaves.

Serve hot with steamed rice or naan bread.
